Local AI means the flow runs locally on a machine you own, in your office or at home.
What that gives you: your files and work stay on that machine while the job runs.
What it does not give you: someone to look after the machine. You keep it switched on and up to date.
The other way
Sometimes a hosted way is the better pick, for example when you do not have a machine to run the flow on. When that is the case, we say so plainly. You still pick.
No drop in quality
The output is checked against a clear standard, whichever way you pick. When a run falls short, we say so.
